Chicken Yakhni Pulao

My easy version of Pulao; chicken and rice made in chicken broth

Ingredients
  

For The Chicken Broth
  • 1 Whole Chicken Remove the skin and cut it in pieces
  • 1/2 Onion
  • 1 tbsp Garlic paste or garlic clove
  • 1/2 Piece of Ginger
  • Whole Garam Masala 1 tsp cumin seeds, 2 green cardamoms, 1 brown cardamom, 3 cloves, 1/2 cinnamon stick, 1 bay leaf, 5 peppercorns, 1 star anise
  • 2 tbsp Dried Coriander
  • 1 tbsp Fennel Seeds
  • 6 cups Water
  • 1 tbsp Salt
For Rice
  • 3 cups Rice rinsed
  • 1/2 Chopped Onion
  • 1 Chopped Tomato
  • 1/2 tbsp Garam Masala Powder
  • 1/2 tsp Cumin seeds
  • 1 tbsp Butter
  • 1 Chicken Bouillon Cube

Method
 

For Chicken Broth
  1. Add all the ingredients for the broth to a pan and cook on high heat for 15 minutes.
  2. Take the chicken out from the broth and strain the broth into a separate bowl.
For Rice
  1. Fry Onion and tomatoes until they are soft. Add the chicken and cook for 5 minutes on medium heat. Add garam masala powder, strained chicken broth and a chicken cube and rice. Let it cook until the broth is dried up.
  2. Add cumin seeds and butter, turn the heat to low and cover.
  3. Steam the rice on low heat for 4 minutes and enjoy!
