Method
- Boil pasta of your choice and set 1/2 cup of water aside.
- In a blender add Spinach, Pine nuts, Olive oil, Grated Parmesan cheese, lemon juice, garlic, a pinch of salt, and pepper. Blend until the consistency is smooth.
- Add the pesto to boiled Pasta, add pasta water and mix thoroughly.
- Pasta is ready!
