Spinach Pesto Pasta

- 16 ounces Pasta
- 6 cups Spinach
- 1/3 cup Pine Nuts
- 1 cup Extra Virgin Olive Oil
- 1/2 cup Grated Parmesan
- 1 tbsp Lemon Juice
- 3 cloves Roasted Or Raw Garlic
- Pinch of Salt & Pepper
- 1/2 Cup Pasta Water
Boil pasta of your choice and set 1/2 cup of water aside.
In a blender add Spinach, Pine nuts, Olive oil, Grated Parmesan cheese, lemon juice, garlic, a pinch of salt, and pepper. Blend until the consistency is smooth.
Add the pesto to boiled Pasta, add pasta water and mix thoroughly.
Pasta is ready!
